First time i made some ragú but definitely not the last.

Ingredients:

  1. 5 tablespoons extra-virgin olive oil
  2. 3 tablespoons butter
  3. 1 carrot, finely, diced
  4. 1 medium onion, diced
  5. 1 rib celery, finely diced
  6. 1 clove garlic, sliced
  7. 1 pound veal, ground
  8. 1 pound pork, ground
  9. 1/4 pound pancetta or slab bacon, ground
  10. 1/2 tube tomato paste
  11. 1 cup milk
  12. 1 cup dry white wine
  13. Salt and freshly ground black pepper
  14. Parmigiano-Reggiano or mozzarella, for grating

Heat up olive oil and butter, add the onions, celery, garlic and sweat them over medium heat until translucent, about 20 min. Move them aside and brown the veal, pork and beacon, after a few min stir in the vegetables with tomato paste, milk and wine and simmer over medium heat for 1 to 1 1/2 hours. Season with salt and pepper to taste.

Possibilities with this sauce are endless. I used it with pasta and made a lasagna.
